Ingredients
1 ½ cups sugar
¼ cup plus 2 tbsp. all-purpose flour
1 tsp. kosher salt
2 whole eggs
6 egg yolks
4 cups whole milk
1 tsp. Happy Home Pure Vanilla Extract
1 tsp. Happy Home Natural Banana Flavor
2 cups heavy cream
½ cup powdered sugar
¼ cup unsweetened cocoa powder
2 (7 oz.) packages Goya chocolate Maria cookies
4-5 medium bananas
Directions:
- In a medium saucepan, whisk together sugar, flour, and salt. Mix in egg, egg yolks, and milk. Place over medium heat. Stir frequently, scraping the bottom until mixture thickens, about 10 minutes. Remove from heat and mix in vanilla extract and Happy Home Natural Banana Flavor. Allow to cool to room temperature, then cover the surface with plastic wrap. Chill until ready to use.
- Using a hand or stand mixer, whip together cream, powdered sugar, and cocoa powder. Whip until medium soft peaks. Cover and refrigerate until ready to use.
- To assemble use a 2-3 quart vessel. Place a layer of pudding in the bottom of the dish, top with a layer of cookies, then a layer of sliced bananas. Repeat. Garnish the very top of the dish with a thick layer of chocolate whipped cream. Refrigerate until ready to serve.
