Ingredients:
1 1/4 cups butter, softened
2 1/4 cups sugar
2 large eggs (room temperature)
3 tbsp honey
1 tsp Happy Home Vanilla Extract
1 tsp Happy Home Maple Extract
2 cups all-purpose flour
2 tsp baking powder
1 1/2 tsp ground cinnamon
1 tsp salt
1 tsp baking soda
2 1/4 cups old-fashioned oats
1 cup finely chopped pecans
Directions:
Preheat oven to 375°
In a large bowl, cream the butter and sugar until fluffy, around 3 minutes.
Beat in eggs. Add in the honey, vanilla extract, and maple extract. In another bowl, whisk together flour, baking powder, cinnamon, salt and baking soda; gradually add to creamed mixture. Stir in the oats and chopped pecans. Drop large spoonfuls of the cookie dough onto a greased baking sheet. Bake 10 minutes or until the edges look slightly browned. Remove from oven.
Cool for a bit and then move cookies onto cooling rack to finish crisping up. Enjoy!
