Ingredients:
1 1/4 cups butter, softened
2 1/4 cups sugar
2 large eggs (room temperature)
3 tblsp honey
1 tsp Happy Home Vanilla Extract
1 tsp Happy Home Maple Extract
2 cups all-purpose flour
2 tsp baking powder
1 1/2 tsp ground cinnamon
1 tsp salt
1 tsp baking soda
2 1/4 cups old-fashioned oats
1 cup finely chopped pecans
Directions:
Preheat oven to 375°
In a large bowl, cream butter and sugar until fluffy, around 3 minutes.
Beat in eggs. Add in the honey, vanilla extract, and maple extract. In another bowl, whisk together flour, baking powder, cinnamon, salt and baking soda; gradually add to creamed mixture. Stir in the oats and chopped pecans.
Drop by large spoonfuls onto greased baking sheet. Bake 10 minutes (or until the edges look slightly browned). Remove from oven. Cool for a bit and then move cookies onto cooling rack to finish crisping up.
