Ingredients
1 cup Sugar
¼ cup all-purpose flour
2 cups water
1 tbsp butter
1 tsp grated lemon zest
¼ tsp salt
3 tbsp cornstarch
3 egg yolks
¼ cup lemon juice
1 tsp Happy Home© Natural Lemon Flavor

Meringue
3 egg whites
½ tsp cream of tarter
6 tbsp sugar
1 tsp Happy Home© Natural Lemon Flavor
Directions-Filling
- Blend sugar, salt, flour and cornstarch.
- Stir in ½ cup cold water. Heat remaining water and add to mixture.
- Cook the mixture in double boiler on low heat until thickened and clear.
- Add beaten egg yolks, cook 1 minute longer.
- Stir in butter, lemon juice, zest and Happy Home© Natural Lemon Flavor.
- Pour in baked pie shell.
- Let cool.
- Top with meringue.
- Bake in moderate oven at 350° F until done.
Directions-Meringue
- Beat together egg whites and cream of tartar until foamy.
- Gradually add sugar, one tbsp at a time, beating until mixture is stiff and can hold its shape.
- Add Happy Home© Natural Lemon Flavor and mix.
- Spread on cooled pie & bake.
