Ingredients
6 cups whole milk (divided)
1/2 cup granulated sugar
1/2 teaspoon kosher salt
1/2 cup long grain white rice
1 tablespoon Happy Home Mexican Vanilla Flavor.
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/3 cup raisins (optional)
Directions
Whisk 5 1/2 cups milk, 1/2 cup sugar, 1 tsp ground cinnamon, and salt in a medium saucepan.
Place on a burner over medium to medium-high heat.
Bring the milk mixture to a low boil.
Add the uncooked rice to the milk, mix well, and reduce the heat to low.
Allow the rice mixture to cook at a gentle simmer, reducing heat as needed.
Continue cooking the rice mixture for 45-60 minutes (cook time can vary), stirring frequently to make sure it isn’t sticking to the bottom of the pan. Rice will thicken to a thick pudding consistency.
Once thickened, remove from the pan from the heat and stir in the Happy Home Mexican Vanilla Flavor and 1/3 cup raisins (optional).
Allow the rice pudding to cool and if desired, add the remaining 1/2 cup of milk to thin out the pudding.
Sprinkle with cinnamon/sugar if desired.
