Peanut Butter Banana Oat Muffins Recipe

Ingredients:

1 cup all-purpose flour
3/4 cup quick cooking oats
1/3 cup packed light brown sugar
1 tbsp baking powder
1 cup milk
1/2 cup peanut butter
1/2 cup mashed ripe banana
1 large egg, beaten
2 tbsp vegetable oil
1 tsp Happy Home Pure Vanilla Extract
1 tsp Happy Home Natural Banana Flavor
3/4 cup dark chocolate chips (optional)

 

Directions:

Preheat the oven to 375° F. Grease the muffin pan.

Combine flour, quick oats, brown sugar, and baking powder in a large bowl. 

Whisk together milk, peanut butter, banana, egg, oil, Happy Home Pure Vanilla Extract, and Happy Home Natural Banana Flavor in a separate bowl. 

Add the wet mixture to dry ingredients, mixing just until moistened.

Fold in the chocolate chips (optional) if making banana chocolate chip oat muffins.

Fill muffin cups 3/4 of the way full.

Bake in preheated oven until golden brown and a toothpick inserted into the center comes out clean, about 18 minutes. Serve your oat banana peanut butter muffins warm.
