Ingredients
2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1/4 cup granulated sugar
1/4 cup light brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon sea salt
1 cup milk
5 tablespoons melted butter
1 large egg
1 teaspoon Happy Home Vanilla Extract
1 cup finely shredded medium zucchini (no need to peel or strain)
3/4 cup mini semisweet chocolate morsels
1/4 cup walnuts (chopped)
Directions
Preheat oven to 375° degrees.
Spray a muffin pan with nonstick spray or line with paper liners.
In a large bowl, whisk together flour, cocoa powder, sugars, baking powder, baking soda, and sea salt.
Add the egg, melted butter, and Happy Home Vanilla Extract. Add milk and stir until combined. Mix in shredded zucchini. Gently fold in the mini chocolate morsels and chopped walnuts (batter will be thick).
Spoon into the muffin pan, filling each muffin cup 3/4 full and place in the oven.
Bake for 20-25 minutes (checking with toothpick at around 15-18 minutes).
Remove from oven. Allow to cool for at least 10 minutes before removing from muffin tin.
